What you'll be qualified to do
In the food industry, upholding strict safety and hygiene standards protects both public health and your business reputation. A certified Food Safety Supervisor oversees and enforces food safety protocols, ensuring every stage of food handling and preparation meets Food Authority regulations. This course delivers two nationally recognised units of competency:
Use hygienic practices for food safety
The skills and knowledge to use personal hygiene practices that prevent contamination of food that might cause food-borne illnesses, following organisational procedures to identify and control food hazards.
Participate in safe food handling practices
The skills and knowledge to handle food safely during storage, preparation, display, service and disposal — typically based on a HACCP food safety program, in line with the Australia New Zealand Food Standards Code.
Participants who require a NSW Food Authority Food Safety Supervisor Certificate complete an additional module covering content specified by the NSW Food Authority:
- Food safety programs
- Identification of food hazards
- Food safety risks
- Controlling bacterial growth
- Handling and preparing food safely
- Storing and disposing of food safely
- Preventing food contamination
- Personal hygiene
- Hygienic cleaning practices

Complete the training online, including uploading short video evidence of tasks in a commercial kitchen.

What you'll need
There are no prerequisites — you can begin right away. Experience in a commercial kitchen is recommended. To complete the course you'll need:
- Technology for online training — a computer with stable internet, a printer, and a means of recording video evidence.
- Access to a commercial kitchen to demonstrate the specified activities.
- Industry-specific PPE — clean uniform, enclosed footwear, hair net, first-aid equipment, etc.
- A valid USI (Unique Student Identifier) — see usi.gov.au/students.
- Personal details and a copy of your photo ID (driver's licence or passport).
- Basic language, literacy and numeracy: using the internet and email, following website instructions, and communicating clearly with your assessor.

No. There are no prerequisites and you can begin right away. You'll need access to a commercial kitchen to demonstrate the practical tasks, and experience in hospitality is recommended but not required.
Yes. It delivers the nationally recognised units SITXFSA005 and SITXFSA006, and Di Pacci Coffee Company (RTO 45805) is approved by the NSW Food Authority — Approval No. 83859.
The fully online course is $129 AUD. You can start right away after enrolling.
It's delivered fully online, including uploading short two-minute smartphone videos of tasks performed in a commercial kitchen. You also have the option to complete your practical workplace assessment at our Roselands facility (1 day / 8 hours).
We recommend completing the online content within 30 days of commencement. Participants who don't complete within 90 calendar days are automatically locked out, though time extensions may be granted on request.
A Statement of Attainment for the two units — and your NSW Food Safety Supervisor Certificate, if applicable — is issued within 30 calendar days of successful completion, subject to all fees being paid and verification of your records including your USI.
